Ingredients
Dough

150 g Wheat flour, white, multi-purpose

150 g Butter, unsalted

2 pinch Salt, table

1 piece Egg, egg yolk, fresh

5 cl Milk, whole milk

250 g Cheese, Brie

2 piece Egg, fresh

1.5 dl Sweet cream

2 pinch Salt, table

1 pinch Spices, pepper, black

2 pinch Spices, nutmeg, ground

1 dl Milk, skimmed

1 spoon Butter, unsalted
Steps

For the delicate pastry, mix softened butter, egg yolk, and a pinch of salt. Add flour and quickly knead into a smooth and pliable dough. If needed, add a little warm milk during kneading. Shape the dough into a ball, lightly flour it, wrap it in plastic wrap, and let it rest in the refrigerator for 30 minutes.

Preheat the oven to 180 degrees Celsius. Grease the muffin tin well. Roll out the dough on a lightly floured surface and cut out circles to line the individual muffin cups. Use your fingers to shape the edges and bottom of the dough, then prick it with a fork in several places. Place the tin in the preheated oven for 10 minutes.

Meanwhile, remove the rind from the cheese, place it in a bowl, and mix it into a cream using a hand mixer. Add eggs, pepper, salt, cream, and nutmeg to the mixture. Thin the filling with a little milk, distribute it over the baked pastry bases, and return the tin to the oven for another 10 minutes. Repeat the process as needed until all the dough and filling are used.

Arrange the prepared puffs on a serving platter and offer them to your guests.
