Ingredients
-
250 g Flour, Wheat, bread flour
-
0.5 teaspoons Yeast, dry
-
0.5 teaspoons Salt, table
-
175 ml Water
-
1 spoon Oil, vegetable oil, canola
-
1 piece Egg, fresh
-
5 pieces Olives, black, in brine
-
1.5 spoons Sesame seeds, dried
-
0.5 teaspoons Spices, paprika
Steps
-
Sift the flour onto a clean work surface. Salt the edges, make a well in the center, and add the yeast, 175 ml of lukewarm water, and one tablespoon of olive oil. Mix the ingredients in the well thoroughly. Knead all the ingredients together by hand to form a smooth dough. Knead for about 10 minutes, then shape the dough into a loaf.
-
Prepare a large bowl, grease it with oil, and place the dough loaf inside. Cover the bowl with oiled plastic wrap and let it rise in a warm place for about an hour, until it doubles in size. Thoroughly drain the olives and slice them into rings.
-
Turn the dough out of the bowl onto a lightly floured work surface and gently knead it again. Divide it into 12 parts, shaping them into round, flat loaves about 7 cm in diameter, reserving some dough. Preheat the oven to 220°C. Crack an egg into a small bowl and beat it with a fork. Place the loaves on a lightly greased baking tray and brush them with the beaten egg.
-
Make a cut in the lower third of the loaves to create a mouth. Use two olive rings for the eyes, and create a beard by sprinkling the loaves with poppy seeds. Roll out the remaining dough into thin strands by hand, attach them to the female faces, and brush with the beaten egg. Use ground red paprika to create red cheeks.
-
Place the baking tray in the preheated oven for 12 to 15 minutes. Once the mini loaves are baked, let them cool slightly, then arrange them on a platter and serve.

Advice
Instead of lukewarm water, you can use warm milk. Poppy seeds can be replaced with black sesame seeds.
