Mini pancakes with cottage cheese and raisins
Juicy mini pancakes are great for breakfast or as a dessert after a meal. Serve them with fruit sauce, compote, or whipped cream as desired.

Ingredients

400 g Cheese, cottage cheese

1 piece Egg, fresh

2 spoons Sugar, white

1 bag Sugar, white

1 teaspoon Lemon zest, fresh

pieces Wheat flour, white, multi-purpose

1 teaspoon Baking powder

100 g Raisins

60 g Butter, unsalted
Steps

Sort through the raisins, place them in a small bowl, and pour boiling water over them. Let them sit for a few minutes to soften and plump up.

In a larger bowl, mix the cottage cheese, egg, regular and vanilla sugar, and grated lemon zest. Add the flour and baking powder, and mix the ingredients well to form a thick and uniform batter.

Drain the soaked raisins and fold them into the batter.

Melt butter in a pan. Scoop the batter with a spoon and place it in small mounds onto the heated pan. Flatten the mounds slightly with the back of the spoon to form small, about 1 cm thick pancakes, and cook them until golden brown on both sides. Remove the cooked pancakes from the pan and keep them on a plate. Repeat the process until all the pancakes are cooked.
