Mini Tarts with Forest Fruits

Ingredients

500 g Dough, puff

2 piece Egg, egg yolk, fresh

200 g Strawberries

200 ml Sweet cream

In a separate bowl, whisk the egg yolk with a fork. Roll out the puff pastry on a floured work surface to about 1 cm thick and cut out circles with a diameter of 6 cm using a glass or round cookie cutter. From half of the circles, cut out smaller circles in the center using a smaller glass or cutter (4 cm diameter).

This will give you rings, large circles, and smaller circles. Brush the large circles with the whisked egg yolk (using a brush), prick them several times with a fork, and stick a pastry ring on each one using the egg yolk. The smaller circles cut from the larger ones will be the lids. Brush these with egg yolk as well.

Preheat the oven to 200°C. Prepare a longer piece of aluminum foil, fold it several times, and make rings with a diameter of 5 cm. Place these rings inside the mini tarts. Arrange the mini tarts and lids on a dampened baking sheet and place it in the preheated oven. Bake the mini tarts for about 10-15 minutes.

While the mini tarts are baking, wash the forest fruits and drain them well. In a bowl, whip the sweet cream with an electric mixer.

Once the mini tarts are baked, remove the baking sheet from the oven and let them cool. Once cooled, fill the mini tarts with the whipped sweet cream and garnish with the forest fruits. If desired, cover them with the lids, then arrange them on a serving platter and serve.
