Mlinci without Eggs
Traditionally, we scald them, season them, and serve them as a side dish to roasted poultry, but they can also be prepared "sweet" - with honey and walnuts or poppy seeds. Sift the flour into a pile on a clean work surface and salt it. Make a well in the center and pour about 2/3 of the lukewarm water into it in a thin stream. Start kneading the ingredients from the center outward with your fingers or a fork. Slowly add the remaining water, and when the ingredients come together and form a not-too-wet dough, start kneading it with your hands. Knead it until it becomes shiny, elastic, and pliable, and does not stick to your hands or the work surface. If necessary, dust your hands with flour in between. Shape the kneaded dough into a loaf, cover it with a clean cloth, and let it rest on a damp work surface for 30 minutes.

Divide the dough into 8 parts (you can make more or fewer), and roll them out as thinly as possible on a lightly floured work surface; the thickness should be that of a knife blade. The usual shape is oval, but you can also roll the dough into irregularly shaped pieces.

Bake the mlinci on a hot stovetop griddle, in the oven (preheated to 230 degrees Celsius), a bread oven, or on a hot pan without fat. When the edges turn golden and curl slightly, flip the mlinci and bake them on the other side.

The baked mlinci can be used while still warm or wait until they cool and harden. Break the hardened mlinci into smaller pieces, scald them with salted water, season them with fat or cracklings, and serve them as a side dish to roasted poultry.
