Olive oil powder: mix olive oil with maltodextrin.

Tomato munchmallow and panna cotta: blend tomatoes with basil and garlic. Strain to obtain tomato juice. Add 24 soaked gelatin leaves to 750 ml of juice. Mix well to achieve a foamy structure similar to munchmallow. Add 2 soaked gelatin leaves to 200 ml of juice and let it set to form tomato panna cotta.

Dried tomato: peel black tomatoes, season, and semi-dry them in an oven preheated to 80 degrees Celsius.

Smoked mozzarella: smoke mozzarella with cherry wood bark and dry Mediterranean herbs.

Serving: peel yellow tomatoes and sprinkle with salt flower. Arrange all individual components beautifully on a plate. Drizzle the prepared dish with oil and garnish with fresh basil.
