Mollete
Mollete is a Spanish round bread, served slightly toasted with olive oil and crushed garlic. The Mexicans borrowed the name and made the dish their own.

250 g Bread, wheat

110 g Beans, grains, cooked

100 g Dry salami, paprika

30 g Cheese, Gouda

1 piece Onion, raw

1 piece Chili peppers, red chili, fresh

Steps

Cut the bread in half lengthwise. Wash the chili, remove the seeds, and finely chop it. Peel the onion, wash it, and finely chop it. Drain the cooked beans, place them in a bowl, and mash well with a fork to create a smooth paste. You can use a hand mixer to help. Mix the onion, chili, and salt into the beans, stirring well to make a bean spread. Grate the cheese. Peel the sausage and finely chop it.

Preheat the oven to 200 °C. Spread the bean spread evenly on both halves of the bread. Sprinkle the grated cheese on top. Place the prepared bread halves on a baking tray lined with baking paper. Put the tray in the preheated oven and bake for 5 minutes. Then, sprinkle the chopped sausage on top and bake for another 2 minutes.

Remove the baked bread from the oven and serve.
