Moroccan Chicken with Apricots and Almonds
Moroccan cuisine is characterized by strong spices and somewhat unusual combinations. For example, they often combine meat with fresh or dried fruits and nuts, and dishes are prepared in a pot called a tagine. 500 ml Soup base, chicken, cube

Steps

Rinse the chicken thighs under running water and thoroughly dry them with paper towels. Season them well with pepper and salt. Peel the onion and garlic, and finely chop them separately. Break the cinnamon stick into a few pieces.

Place a large pot with a thick bottom on the stove and heat the oil in it. Add the seasoned chicken thighs and sear them on all sides in the hot fat. Remove the seared thighs from the pot and set them aside on a plate.

Lower the temperature and add the chopped onion to the pot. Fry it for about 10 minutes, stirring occasionally, until it softens and slightly browns. Add the ground spices and garlic, and fry for another minute while stirring constantly.

Add the seared thighs, cinnamon stick pieces, and apricots to the pot. Pour in the lemon juice and honey, and mix well. Add the broth, cover the pot, and simmer the dish on low heat for about 60 minutes. Add more liquid (water or broth) if needed.

Taste the prepared dish and adjust the seasoning with salt or pepper if desired. Garnish with fresh coriander leaves and toasted almonds, and serve with couscous or rice.
