Muffins with White Chocolate and Blueberries

Ingredients

1 piece Egg, fresh

50 g Butter, unsalted

100 ml Milk, whole milk

50 g Sugar, brown

150 g Wheat flour, white, multi-purpose

0.75 teaspoons Baking powder

1 pinch Salt, table

75 g Blueberry, raw

75 g chocolate, dark
Steps

Preheat the oven to 190 degrees Celsius. Grease the muffin tin wells well with butter (or place paper liners in them). In a small saucepan over low heat, melt the butter, then let it cool slightly. In a bowl, mix the flour and baking powder.

In another bowl, use a hand whisk to mix the eggs, milk, sugar, and melted butter. Add the dry ingredient mixture to the egg mixture and stir with a spatula just enough to moisten and combine all the ingredients. Finally, fold in the blueberries and chocolate chunks.

Fill the muffin tin wells with the prepared batter up to 2/3 full. Bake the muffins in the preheated oven on the middle rack for 20 to 25 minutes, or until they turn golden brown. To check if the muffins are baked, insert a toothpick into a muffin - if it comes out clean, the muffin is done.

Remove the baked muffins from the oven. Let them cool, then transfer them to a serving plate and serve.

Advice
Blueberries can also be frozen, allowing you to enjoy their flavor even out of season. The number of muffins depends on the size of the molds in the muffin tin. To check if the muffins are baked, insert a toothpick into a muffin. If the toothpick comes out clean, the muffins are done. The ingredients for the muffins should only be quickly mixed with the dry ingredients. Overmixing will make the batter tough, and the muffins wont rise enough during baking. The batter wont rise if you forget to add baking powder or baking soda. The latter makes the muffins especially airy. To easily remove the baked muffins from the molds, its best to dust the molds with flour or grease them with butter. An even better option is to use paper liners placed in the muffin tin.
