Ingredients

250 g Dough, puff

1 piece Egg, fresh

100 g Mushrooms, mushrooms, fresh

1 piece Lemon, fresh, without shell

70 g Cheese, edamame

3 twigs Parsley, fresh
Steps

Roll out the puff pastry on a lightly floured work surface and cut it into 5 x 5 cm squares. Thoroughly clean the mushrooms, wash them, and slice them thinly. Cut the lemon in half and squeeze the juice. Wash the parsley well and chop it finely.

Grate the cheese and mix it in a bowl with the mushrooms, parsley, and a tablespoon of lemon juice. Season with salt and pepper to taste. Crack an egg and separate the yolk from the white into two small bowls. Brush the edges of the squares with the egg white (using your fingers or a brush) to prevent the pockets from opening during baking.

Place a tablespoon of filling in the center of each square, then fold the pastry into the shape of a letter. Whisk the egg yolk and brush it over the prepared pockets. To prevent steam from escaping, prick the pockets with a fork. Preheat the oven to 180 degrees Celsius.

Rinse the baking dish well with cold water, arrange the pockets on it, and place the dish in the oven for about 30 minutes. Once the pockets are baked, arrange them on a platter and serve them warm to your guests.

Advice
Puff pastry can be bought or made at home. The baking dish can be lined with baking paper. The easiest way to thaw puff pastry is to leave it packaged in the refrigerator overnight. If thats not possible, place the sheets of puff pastry on a plate side by side and let them thaw at room temperature for 30–60 minutes.
