Mushrooms with Couscous

350 g Mushrooms, mushrooms, fresh

2 spoons Oil, vegetable oil, canola

200 g Couscous, dry
Parsley pesto

40 g Nuts, almonds

1 bouquet Parsley, fresh

2 pod Garlic, fresh

60 g Cheese, Parmesan, grated

100 ml Oil, olive

2 pinch Spices, pepper, white

Prepare parsley pesto from the listed ingredients as described. Clean the mushrooms, rinse them quickly under running water, and then dry them well. Peel and wash the onion. Save the onion stems for decoration, and finely chop the bulbs.

Place a medium-sized pan on the stove and heat the oil. First, sauté the mushrooms in it. While turning them, cook them over moderate heat for about 10 minutes. Then add the chopped onion to the pan and quickly sauté it together with the mushrooms. Remove the pan from the heat and add half of the parsley pesto. Mix everything well.

Place a larger pot on the stove and pour about half a liter of water into it. Add one teaspoon of oil and half a teaspoon of salt, then wait for the water to boil. Pour the couscous into a larger bowl. Pour the boiling water over it, cover the bowl, and wait for 10 minutes until the couscous absorbs all the liquid.

Once the couscous is ready, fluff it well with a fork to separate the grains. Mix the sautéed mushrooms into the couscous.

Serve the couscous in deep bowls. Sprinkle a teaspoon or two of parsley pesto on top. Before serving, decorate the dish with the washed onion stems.

Advice
To make our meal even healthier, we can use whole grain couscous. Mushrooms can be sliced thinly if desired. It doesnt matter which type of mushrooms we use, but remember that white mushrooms have a slightly milder aroma than brown ones.
