Nest of Young Beans, Brown Butter, Shrimp with Wasabi

Ingredients

200 g Beans, fresh

4 pieces Fish, shrimp

1 spoon Horseradish, prepared

500 g Butter, unsalted

50 g Nuts, hazelnuts

0.5 piece Onion, raw

1 pod Garlic, fresh

0.5 piece Carrot, fresh

Steps

Place 400 g of butter in a saucepan and heat it until it turns a beautiful brown color, then remove it from the heat. Be careful not to burn the butter!

Remove the tails from the shrimp and clean them. Place them in the brown butter, which should not exceed 40 degrees Celsius.

Make a stock from the shrimp shells, adding half an onion, a clove of garlic, and half a carrot. Season with salt and pepper, and pour in three deciliters of water. Let the stock simmer until only one deciliter of liquid remains in the saucepan.

Strain the stock and pour it back into the saucepan, removing it from the heat. While continuously stirring, gradually add cubes of butter to create a thick and silky sauce.

Halve the young bean pods. Toss the beans into the sauce to warm them up. Slice the bean pods into thin 'strands'.

On the plate where the dish will be served, first place a small pile of the bean strands and pour the shrimp sauce and beans over them. Place the shrimp on the 'nest,' spreading a little wasabi on the underside as you remove it from the brown butter.

Finally, sprinkle the dish with coarsely chopped toasted hazelnuts.
