No-Bake Piña Colada Cubes
A refreshing summer dessert with the flavors of coconut and pineapple, prepared quickly and without baking. The dessert does not contain white rum, but if you wish to delight adults with it, you can of course add it to the pudding.

Ingredients
Cookie base

200 g Breadcrumbs, dried

100 g Butter, unsalted

570 g Pineapple, compote

340 g Cheese, creamy

450 ml Sweet cream

20 g Gelatin powder, unsweetened

100 g Powdered sugar

2 bags Pudding, vanilla

200 g Chocolate spread, with hazelnuts

Steps

Crush the biscuits and mix them with melted butter. Line the bottom of a baking dish, sized 25 x 35 centimeters, with the biscuit mixture.

Drain the pineapple juice and set it aside, then crush the pineapple into smaller pieces with a fork. Mix it with cream cheese.

Mix the cream with gelatin, then whip it together with 70 g of powdered sugar until you get a firm cream. Fold one-third of it into the cream cheese and pineapple mixture. Spread the cream over the biscuit base and place it in the refrigerator.

Add enough water to the pineapple juice to make half a liter of liquid. Cook vanilla or coconut pudding in it, adding the remaining powdered sugar. Once the pudding has cooled slightly, mix in the coconut spread. Spread the coconut cream over the pineapple layer. Place the dessert in the refrigerator.

Once the pudding sets, spread the remaining cream on top. Place it back in the refrigerator for at least two hours. Decorate the dessert with toasted coconut and cherries as desired.
