Norwegian Pancakes
Excellent pancakes that can be topped with chocolate, fruit syrup, or other treats.

Ingredients

4 pieces Egg, fresh

125 ml Water

1 teaspoon Vanilla, extract, natural

75 g Sugar, white

75 g Butter, unsalted

275 g Wheat flour, white, multi-purpose

225 ml Milk, partially skimmed

30 g Butter, unsalted

2 spoons Powdered sugar
Steps

Add butter to a cup and melt it over moderate heat. Remove the cup with the melted butter and let it cool slightly.

Crack the eggs into a bowl and whisk them together with vanilla extract and warm water using an electric mixer until frothy. Gradually add sugar to the bowl while continuously mixing. Gradually mix in the flour as well. Finally, stir in the melted butter and milk.

Place a small pan on the stove and melt a teaspoon of butter in it. Then, pour a small ladle of batter into the pan. Rotate the pan to spread the batter evenly. Cook the pancake for about half a minute, then flip it using a spatula. Cook for another 30 seconds, then transfer the pancake to a plate and roll it into a tube. Repeat the process until all the batter is used.

Stack the prepared pancakes on top of each other. Finally, dust them with powdered sugar or drizzle with your favorite sweet sauce.
