Nut and Tomato Brittle

70 g Walnuts

50 g Pine nuts

2 spoons Sesame seeds, dried

1 piece Lemon, fresh, without shell

350 g Sugar, white

3 spoons Tomato, concentrate
Steps

Spread all the nuts on a baking sheet and roast them in a preheated oven. Be careful not to burn the nuts, so it's best to stir them a few times during roasting.

Cut the lemon in half and squeeze the juice from both halves. Place a thick-bottomed saucepan on the stove and heat sugar with a few tablespoons of water and lemon juice over moderate heat for 20 minutes. Stir the mixture while heating to prevent the sugar from burning.

Roughly chop half of the roasted nuts and add them to the saucepan with the caramelized sugar. Add the remaining nuts and tomato concentrate, and mix everything well.

Spread the prepared mixture onto a piece of parchment paper and roll it out to an even thickness using a rolling pin. Let the brittle cool and harden.

Break the cooled brittle into smaller pieces and serve it with ice cream.
