Oat Bread Without Yeast

250 g Wheat flour, white, multi-purpose

250 g Flour, Whole wheat

100 g Oat bran, raw

1.5 teaspoons Baking powder

1 teaspoon Salt, table

25 g Butter, unsalted

500 ml Yogurt, plain, from skimmed milk

1 handful Oat bran, raw
Steps

Preheat the oven to 200 degrees Celsius. Lightly grease the baking tray on which the bread will be baked.

In a large bowl, mix the white and wholemeal flour, oatmeal, baking soda, and salt. Sprinkle the butter pieces over the mixture. Use your fingertips to rub the fat into the dry ingredients. Pour in the buttermilk and mix well with a spoon until the ingredients come together and form a rough dough. Turn the dough onto the greased surface and quickly knead it.

Place the dough on the baking tray, shape it into a loaf (about 20 cm in diameter), and make a cross on top with a knife. Brush the dough with a little buttermilk and sprinkle with oatmeal. Bake the bread in the preheated oven for 30 to 35 minutes. The bread is done when it sounds hollow when tapped on the bottom. Place the baked loaf on a wire rack, cover with a cloth, and let it cool.

Advice
Instead of buttermilk, you can use liquid yogurt or milk with a teaspoon of lemon juice added. Add seeds (flax, sunflower, pumpkin, etc.) to the dough as desired.
