Oat Flapjack

230 ml Soy milk

1 spoon Margarine

1 spoon Peanut butter, smooth, without salt

2 spoons Syrup, maple

1 piece Banana, fresh

230 g Oat bran, raw

70 g Nuts, hazelnuts

5 spoon Dried plums

30 g Flaxseed
Steps

Preheat the oven to 150 degrees Celsius. Line a small rectangular baking dish (22 x 15 cm) with baking paper.

In a bowl, add a peeled banana and mash it well with a fork. In a saucepan, heat oat milk. Add peanut butter, margarine, and maple syrup, and mix well until you get a smooth mixture. Pour this into the bowl with the mashed banana. Add flaxseeds and rolled oats, and mix everything thoroughly. Let it sit for a few minutes so the oats absorb the liquid and soften.

Stir in chopped hazelnuts and goji berries into the mixture. Transfer it to the baking dish and bake in the preheated oven for about 40 minutes or until the top is nicely golden brown.

Let the baked mixture cool in the dish for a few minutes, then transfer it to a wire rack using the baking paper and let it cool completely. Once cooled, cut it into six rectangular slices.
