Steps

Wash the apple, peel it, and remove the core. Cut it into pieces, place them in a bowl, and pour lemon juice over them. Mix well so that all pieces are evenly seasoned.

In a bowl, mix the dry ingredients: flour, oatmeal, spices, and baking powder.

In another bowl, cream the butter with regular and brown sugar. Add the egg and a teaspoon of vanilla extract, and mix everything well until you get a light and uniform mixture.

First, mix the dry ingredients into the egg-butter mixture, then add the apple pieces. If the dough is too soft and sticky, cover the bowl with plastic wrap and refrigerate it for a while to firm up.

Line a baking sheet with parchment paper. Take a walnut-sized piece of the prepared dough and roll it into a ball between your palms, then place it on the baking sheet. Repeat the process until you run out of dough, leaving some space between the balls as they will spread slightly during baking. You can also shape the cookies by scooping the dough with a small ice cream spoon and placing dollops of dough on the baking sheet.

Bake the cookies for 12-15 minutes in an oven preheated to 180 degrees Celsius. They are done when they turn golden brown and slightly brown at the edges.
