Oatmeal and Walnut Cookies
These are excellent to enjoy as they are, and for an even greater treat, you can pair them with a glass of cold milk or a cup of your favorite hot beverage.

250 g Butter, unsalted

200 g Sugar, brown

3 pieces Egg, fresh

300 g Flour, Wheat, bread flour

1 pinch Salt, table

1 bag Baking powder

150 g Oat bran, raw

Steps

Cream the butter and sugar until fluffy. Gradually, one by one, mix in the eggs. You should get a light and uniform mixture.

In a clean bowl, sift the flour and mix it with salt and sifted baking powder. Mix the mixture into the egg-butter mixture on low speed. Add the oatmeal and walnuts. Mix everything well with a mixer or spoon, then refrigerate the prepared dough for 20 minutes.

Preheat the oven to 180 degrees Celsius. Line a baking tray with parchment paper. Scoop the chilled dough with a spoon and shape it into balls, placing them spaced apart on the baking tray. Gently press your thumb into each ball (you can also use the handle of a mixer dipped in water) to create a small indentation, which you fill with jam and top with half a walnut kernel.

Bake the cookies in the preheated oven for 15-20 minutes or until they turn golden brown.

Remove the baking tray from the oven and transfer the cookies to a wire rack. Let them cool completely before serving, and optionally decorate them with melted chocolate.
