In a small pot, slowly melt the butter over low heat. Once the butter has melted, remove the pot from the heat. Chop the chocolate into smaller pieces and roughly chop the nuts. In a bowl, mix the oatmeal, coconut flour, chopped nuts, and chocolate chips. In another bowl, mix the flour, salt, baking soda, ground nutmeg, and cinnamon.

Preheat the oven to 175 degrees Celsius. In a clean bowl, pour the melted butter and add both types of sugar (brown and regular). Using an electric mixer on medium speed, mix for about 3 minutes. Add the eggs and vanilla. Continue mixing on medium speed for another 3 minutes until all the ingredients are well combined.

Add the flour and spice mixture and incorporate it into the egg mixture using a wooden spoon. If needed, add 1 or 2 tablespoons of water (the amount of liquid added depends on the size of the eggs you use). Finally, add the mixture of oatmeal, coconut, chocolate, and nuts to the bowl. Use a wooden spoon to mix everything together until you have a uniform mixture.

Line two large baking sheets with parchment paper. Using a spoon, place dollops of the mixture onto the baking sheets. Make sure to leave about 5 cm of space between each dollop, as the cookies will spread during baking.

Bake the cookies in the preheated oven for about 10 minutes, or until the edges are golden brown and the centers are still soft. If you prefer crispier cookies, bake them for 12 to 14 minutes.

Remove the baking sheets from the oven and let the cookies cool on the sheets for 2 minutes. Then transfer the cookies to a wire rack and let them cool completely.
