Oatmeal Cookies with Cranberries and Spices
If youre so pressed for time in the morning that you dont even have time to eat cereal, oatmeal cookies will come in very handy. You can easily take them to work and enjoy them with a cup of your favorite morning drink. Since they contain a lot of fiber, dried fruit, and healthy spices, they are also an excellent choice for a healthy start to the day.

Ingredients

Steps

Preheat the oven to 180 degrees Celsius, line a low baking sheet with parchment paper. In a saucepan, slowly melt the butter over low heat, remove from heat, and let it cool until lukewarm. Chop the cranberries coarsely if desired.

In a bowl, whisk the egg, melted butter, sugar, and maple syrup until smooth. In another bowl, mix the flour, baking powder, oatmeal, cranberries, and spices. Add the egg mixture and stir everything together with a spoon until well combined, then let the mixture rest for 10 minutes.

Drop the mixture in spoonfuls onto the baking sheet. Make sure to leave a few centimeters of space between them, as the cookies will spread during baking. Flatten the mounds slightly with the back of a spoon, then bake in the preheated oven for 15 to 17 minutes.

When the cookies turn golden brown on top and around the edges, remove them from the oven and let them cool on the baking sheet for 10 minutes, then transfer them to a wire rack to cool completely. Serve with a warm or cold drink.

Advice
Store the cooled cookies in an airtight container in a dry place. Instead of cranberries, you can also use other dried fruits (raisins, apricots, dates, etc.), and you can add nuts or seeds to the cookies as desired (hazelnuts, almonds, sunflower seeds, flax, etc.).
