Ingredients
-
120 g Oat bran, raw
-
30 g Nuts, hazelnuts
-
1 pinch Salt, table
-
0.25 teaspoons Spices, cinnamon, ground
-
3 spoons Honey
-
2 spoons Peanut butter, smooth
-
1 piece Egg, egg white, fresh
-
pieces Oil, vegetable oil, canola
-
250 g Yogurt, plain, from skimmed milk
-
pieces Raspberries
Steps
-
Preheat the oven to 170 degrees Celsius. In a large bowl, mix the oatmeal, chopped nuts, cinnamon, and salt.
-
In a smaller bowl, add almond butter and honey. Heat the ingredients in the microwave for 20-30 seconds on high to make them easier to mix. Once you have a smooth and uniform mixture, add it along with the egg whites to the bowl with the dry ingredients. Mix everything well to form a uniform mixture. The dough should not be crumbly or too sticky.
-
Lightly grease the muffin tin with oil. Divide the oatmeal mixture into eight equal parts and distribute them into the greased muffin cups. Use wet fingers to spread the mixture along the bottom and pull it up the sides to form cups.
-
Bake the cups in the preheated oven for 10 to 12 minutes. They are done when they turn golden brown. Leave the baked cups in the tin to cool completely.
-
Before filling the cooled cups with Greek yogurt, mix it well. If desired, you can add a bit of honey or maple syrup. Finally, decorate the filled cups with fresh fruit.
