Octopus Tapas

Ingredients

1 kg Octopus, fresh

4 spoon Vinegar, red wine

3 pods Garlic, fresh

2 piece Spices, bay (leaves)

5 twig Thyme, fresh

3 pieces Potatoes, white

1 spoon Spices, pepper, black

0.5 teaspoons Salt, table
Steps

Rinse the octopus thoroughly. Place it in a large pot and cover it with water. Peel, rinse, and crush the garlic. Add it to the pot with the octopus. Rinse the thyme sprigs and dry them. Add the vinegar, bay leaves, thyme, and peppercorns to the pot. Place the pot on the stove and cook over high heat until the water boils. Once it boils, skim off the foam from the surface and remove it.

Reduce the heat and cook the octopus at a moderate temperature for another 1.5 hours. Then remove the octopus from the water and test if it is cooked enough by inserting the tip of a knife into the thickest part of the tentacle. If the knife goes through easily, the octopus is cooked. If not, cook it for a few more minutes until it becomes tender.

Let the octopus cool. Meanwhile, peel and rinse the potatoes. Place them in a pot and add enough water to cover them. Add half a teaspoon of salt to the water. Once the water with the potatoes boils, cover the pot and let the potatoes cook over moderate heat for another 15 minutes. Then drain the water and slice the potatoes into rounds. Arrange the potatoes on a serving platter.

Cut off all the tentacles from the octopus and slice them into thin rounds. Place each round of octopus on a round of potato and serve.
