Octopus with Baked Potatoes

1 kg Octopus, fresh

1 kg Potatoes, white

pieces Salt, table

1 handful Olives, black, in brine

1 piece Onion, raw

5 spoon Oil, olive

1 dl Alcohol, Wine, White

Steps

Preheat the oven to 200 degrees Celsius. Grease a deep baking dish with oil. Clean the octopus, wash it, and drain it well.

Peel the potatoes, wash them, and cut them into larger pieces, then season with salt and pepper. Peel the onion and slice it into rings. Place the octopus in the greased baking dish. Arrange the potato pieces and onion around it, along with olives. Drizzle everything with olive oil. Add a little white wine to the dish, then cover it (with a lid or aluminum foil) and bake in the preheated oven for 60 minutes.

Remove the baking dish from the oven and carefully uncover it (be careful not to burn yourself with the steam). Return it to the hot oven for another 10 to 15 minutes to allow the ingredients to brown nicely. Sprinkle the prepared dish with chopped parsley before serving.
