Octopus with Potato Salad
Octopus with potato salad is a dish we usually enjoy in coastal restaurants, but with minimal effort, we can prepare it in our own kitchen. All we need is octopus, potatoes, and a good recipe, of course.

1 kg Octopus, fresh

0.5 piece Onion, raw

1 twig Rosemary, fresh

Steps

Thoroughly clean and rinse the octopus. Bring water to a boil in a large pot. Add onion, lemon peel, peppercorns, and rosemary to the boiling water. Add the octopus and cook it covered over moderate heat until tender (about 1 hour). Remove the pot from the heat and let the octopus cool in the liquid it was cooked in.

Peel, wash, and cut the potatoes into smaller pieces, then boil them in salted water. Cook until soft, being careful not to overcook them (they should retain their shape). Drain the cooked potatoes and cool them under cold running water.

Wash the cherry tomatoes. Cut larger ones into quarters and smaller ones in half. Pit the olives and slice them into rings. Peel the garlic, rinse the parsley under running water, and shake off excess water. Finely chop both ingredients.

Peel the cooled octopus and slice it into rings. Add the rings to a large bowl along with the potatoes, tomatoes, and olives. In a small bowl, mix lemon juice, olive oil, garlic, parsley, salt, and pepper. Pour the prepared dressing over the ingredients in the bowl and gently toss. The salad can be served immediately, but it’s even better if stored in the refrigerator for about an hour to cool thoroughly.
