70 g Olives, green, in brine

200 g Cheese, goat, soft

250 g Wheat flour, white, multi-purpose

80 ml Oil, olive

300 g Yogurt, plain, from whole milk

Preheat the oven to 180 degrees Celsius. Grease the muffin tin and dust it with flour or use paper liners.

Drain the olives and slice them thinly. Cut 150 g of sheep cheese into cubes, and crumble the rest. In a bowl, combine the flour with the sliced olives, rosemary, baking powder, baking soda, salt, and pepper. In another bowl, mix the egg and then add the oil, crumbled cheese, and yogurt.

Pour the wet mixture into the bowl with the dry ingredients and quickly mix with a whisk just until combined. Fill the muffin tin halfway with the batter and place a cube of cheese in each. Top with the remaining batter, then place the tin in the oven.

Bake the muffins in the middle rack of the oven for 20 minutes. Once baked, let them rest for about 10 minutes, then remove them from the tin and serve warm or cold.
