Omelette with Wild Garlic

30 g Butter, unsalted

2 piece Egg, fresh

50 g Cheese, Cheddar

Wash the wild garlic leaves, dry them, and roughly chop them. Grate the cheese. Crack the eggs into a bowl, lightly season with salt and pepper, and whisk with a fork. Add 2/3 of the chopped wild garlic and mix everything well.

Place a pan on the stove and heat it over medium heat. Add butter and wait for it to melt. Tilt the pan to coat it evenly.

Pour the egg mixture into the pan. Without stirring, wait for the edges to set, then lift them with a spatula to let the egg mixture flow underneath the omelette.

When the omelette is still slightly soft and tender inside, sprinkle it with the grated cheese and the reserved wild garlic leaves. Remove the pan from the heat, fold the omelette, serve it on a plate, and enjoy.

Advice
In addition to the leaves, you can also chop wild garlic buds, flowers, or stems, as all parts of the plant are edible. If using wild garlic bulbs, be aware that they have a quite pungent flavor. Therefore, we recommend using them in smaller quantities. Add a little milk to the egg mixture if desired. Use cheese of your choice (e.g., gouda, edam, cheddar, parmesan,…).
