Omelette with Zucchini and Pancetta
A juicy omelette with zucchini, pancetta, and cheese is an excellent choice for lunch or dinner, but you can also enjoy it for breakfast. For a side dish, choose a leafy or tomato salad, and of course, dont forget a slice or two of bread to enjoy every last bit of the dish.

Ingredients

1 spoon Oil, vegetable oil, canola

80 g Meat, pork, smoked bacon

5 pieces Egg, fresh

5 spoon Sweet cream

300 g Small pumpkins

50 g Ham, pressed

1 spoon Spices, oregano, dried

1 pod Garlic, fresh

50 g Cheese, Gouda

Steps

Wash the zucchini and grate them coarsely. Lightly salt them and let them sit for 10 minutes, then squeeze them well with your hands to remove excess liquid. Peel the garlic and finely chop it.

Add the drained zucchini to a bowl along with diced ham, half of the grated cheese, oregano, chopped garlic, and pepper. Mix the ingredients well. In another bowl, crack the eggs, whisk them thoroughly with a fork, and mix them with milk or cream.

Preheat the oven to the broil function. Place a pan on the stove, heat it, and grease it with a little oil. Add the pancetta slices and fry them until crispy on both sides. Pour the whisked eggs into the pan and sprinkle the zucchini, ham, and cheese mixture over them. Cook on low heat and gently stir the eggs with a spatula at the beginning. Once the bottom sets and forms a crust, stop stirring to avoid breaking the omelette.

Place the pan in the preheated oven for a few minutes to allow the omelette to bake nicely on the top as well. Be careful not to overcook it, as the egg mixture can become too dry.

Sprinkle the remaining cheese over the baked omelette, then cut it into pieces, serve on plates, and enjoy.
