Ingredients
-
500 g Meat, beef, side
-
1 piece Onion, raw
-
4 pods Garlic, fresh
-
3 pieces Carrot, fresh
-
250 g Turnip
-
2 spoons Oil, vegetable oil, canola
-
3 spoons Flour, Wheat, bread flour
-
1 teaspoon Salt, table
-
1 piece Spices, bay (leaves)
-
0.5 teaspoons Spices, pepper, black
-
2.5 dl Soup base, beef, cube
-
3.5 dl Alcohol, Beer
-
0.5 bouquet Parsley, fresh
Steps
-
Wash the meat, pat it dry, trim off the fat and tendons, then cut it into 2 cm cubes. Peel and chop the onion and garlic.
-
Combine flour, half a teaspoon of salt, and pepper in a shallow bowl and mix well. Toss the meat cubes in the flour mixture, ensuring they are evenly coated on all sides. Place a pot on the stove and heat it over medium heat. Add oil to the pot. Sear the floured meat cubes on all sides in the hot oil.
-
Pour in the broth and beer, then season with garlic and bay leaf. Use a wooden spoon to scrape the bottom of the pot, loosening any caramelized bits of meat that have stuck. Increase the heat and wait for the stew to come to a boil, then cover the pot, reduce the heat, and simmer slowly for 1.5 hours.
-
Peel, wash, and cut the carrots into 2 cm pieces. Peel, wash, and cut the turnip into larger pieces. After 1.5 hours, add the carrots to the pot, cover it again, and cook for 25 minutes. Then add the remaining salt, turnip, and onion. Cover and cook for another hour or until the vegetables are tender and the meat can be easily shredded with a fork.
-
Wash, shake dry, and chop the parsley. Remove the bay leaf, divide the stew onto plates, sprinkle with parsley, and serve.
