One-Pot Dish with Ground Meat, Peppers, and Potatoes
Even in the summer, we can prepare a good one-pot dish for lunch or dinner. To add a finishing touch, we can add a spoonful of sour cream and sprinkle some chopped parsley or chives on top when serving.

1 piece Onion, raw

2 pod Garlic, fresh

500 g Meat, beef, ground

2 spoons Tomato, concentrate

700 g Potatoes, white

500 ml Soup base, beef, cube

Steps

Peel the onion and garlic, then finely chop them separately. Wash and clean the pepper (remove the stem and seeds). Cut it into strips or chunks.

Peel the potatoes, wash them, and cut them into bite-sized pieces. If using new potatoes, peeling is not necessary. Place the chopped potatoes in a bowl and cover them with cold water.

Heat oil in a large pot and sauté the onion. Once it becomes translucent and softens slightly, add the garlic and sauté together for 1-2 minutes until fragrant.

Add the ground meat to the pot and break it into smaller pieces with a spatula. Cook until all the pieces are nicely browned, then stir in the tomato paste and spices. Quickly sauté everything while stirring, then add the potatoes and pepper. Stir and sauté for another 1-2 minutes, then pour in the broth.

Use the spatula to scrape the bottom of the pot to release any caramelized bits that formed during cooking. Add the tomato, give everything a final stir, and let the one-pot dish simmer over medium heat for 25 to 30 minutes. It’s ready when the potatoes are tender, but be careful not to overcook them so they don’t fall apart.

Before serving, season the dish with salt and/or ground pepper if needed. Serve in deep bowls, adding a spoonful of sour cream and a sprinkle of chopped parsley on top. Serve with bread or homemade flatbreads.
