One-Pot Dish with Potatoes and Corn

Ingredients

2 spoons Oil, vegetable oil, canola

1 piece Onion, raw

4 pieces Potatoes, white

800 ml Soup base, chicken, cube

300 g Corn, yellow, in brine

240 ml Milk, skimmed

0.25 teaspoons Salt, table

2 pinch Spices, pepper, black

4 teaspoon Sour cream

Peel and finely chop the onion. Heat oil in a pot, add the onion, and sauté it over moderate heat, stirring occasionally, until it becomes translucent.

While the onion is frying, peel, clean, and wash the potatoes. Cut them into cubes and add them to the pot with the sautéed onion. Fry for another minute while stirring, then pour in the broth. Bring the contents of the pot to a boil, then reduce the heat, cover the pot, and cook for 10 to 15 minutes until all the potato pieces soften.

Pour milk into the pot and add the corn. Season with salt and pepper to taste, bring to a boil again, and cook for another 2 to 3 minutes until the corn softens. Then remove the pot from the heat.

Transfer about half of the cooked vegetables to an electric blender and blend until smooth. Pour the blended vegetables back into the pot and mix everything well. Serve the prepared one-pot dish in deep bowls or soup cups, garnish with a spoonful of sour cream, and serve.
