Ingredients

1 piece Onion, raw

200 g Flour, chickpea

0.5 bags Baking powder

2 spoons Flour, rice

0.5 teaspoons Chili peppers, red chili, dried

0.5 teaspoons Spices, turmeric, ground

100 ml Water

Peel the onion, wash it, and slice it into rings. In a large bowl, mix together chickpea flour, rice flour, cumin, turmeric, coriander, chili, a pinch of salt, and baking powder. Mix everything well. Then add water and whisk until you get a smooth mixture without lumps. Separate the onion rings into individual rings and toss them into the mixture. Gently mix everything together so that the onion is completely coated with the batter.

Heat the oil well in a pan. Be careful not to let it start smoking. Take some of the batter from the bowl and place it in the oil. If it starts to sizzle nicely, the oil is hot enough. Pick up the onion rings from the mixture and place them in the hot oil. Be careful not to add too many onion rings at once, as they may stick together. Fry the onion for 2 minutes until it becomes golden brown. Then remove it from the oil with a slotted spoon and place it on a paper towel to drain well. Repeat the process until all the onions are fried.

Serve the onion rings while still warm. Lightly salt them before serving. They can be served individually or with a sauce.

Advice
Fry in a large amount of fat. The food must float in it. For frying, use fats that do not contain water, such as coconut oil or good quality oil. The fat is hot enough for frying if small bubbles form around a wooden spoon handle.
