Onion Pie

Prepare the salty shortcrust pastry according to the recipe, shape it into a loaf, flatten it, divide it into four parts, and refrigerate for half an hour.

Peel the onion and cut it into very thin slices. Place a larger pot on the stove, in which we melt the butter together with olive oil. Once the butter has melted, add the onion to the pot, season with salt and pepper, and sauté over moderate heat, stirring until the onion becomes translucent. Be careful not to let the onion brown! Remove the pot from the heat.

In a bowl, whisk together 4 eggs, cream, milk, and flour with a fork or a hand whisk. Pour the mixture into the pot and mix well.

Preheat the oven to 200 degrees Celsius. Roll out the shortcrust pastry on a floured work surface to about 0.5 cm thick and use it to line a well-greased and lightly floured pie dish. The pastry should slightly overlap the edges. Press the pastry gently with your fingers against the bottom and sides of the dish, then prick it with a fork in several places. Use a rolling pin to firmly press over the edge of the dish to trim off the excess pastry and create a nice edge. Pour the prepared onion filling over the pastry, spreading it evenly. Bake the pie in the preheated oven for about 40 minutes.

Allow the baked pie to cool slightly, then cut it into pieces, arrange them on plates, and serve. It can be served warm or cold.
