Onion Soup with Cheese Croutons

60 ml Alcohol, Dessert wine

250 ml Alcohol, Wine, White

1 l Soup base, beef, cube

Steps

Peel the onion and slice it thinly. Peel the garlic and chop it finely.

Melt the butter in a pot. Add the onion, season with salt, and sauté until the onion turns a delicate brown color. Add the chopped garlic and thyme leaves, and continue sautéing.

Pour dry sherry over the sautéed ingredients and let it simmer. Then add the wine and continue cooking slowly until the wine simmers and the onion softens. Pour in the beef stock and simmer on low heat. Season the soup with salt and pepper to taste.

While the soup is cooking, prepare the cheese croutons. Slice the baguette diagonally and top the slices with grated cheese. Bake in the oven preheated to 220 degrees Celsius until golden brown.

Serve the prepared soup in deep bowls or soup cups. Add the baked cheese croutons and serve the dish immediately.
