Onion Soup with Toasted Bread

Ingredients

100 g Butter, unsalted

6 pieces Onion, raw

2 spoons Sugar, white

3 pods Garlic, fresh

300 ml Alcohol, Wine, White

800 ml Soup base, chicken, cube

300 g Bread, wheat

200 g Cheese, edamame

2 spoons Alcohol, Whisky

1 pinch Salt, table

1 pinch Spices, pepper, black
Steps

Peel the onion and slice it into thin strips, then toss them into a pot with melted butter. Sprinkle with sugar and sauté over high heat for 10 to 15 minutes until the onion turns a delicate brown color.

Pour the wine into the pot and cook over lively heat for one to two minutes. Add the hot broth and bring to a boil. Immediately reduce the heat and simmer for another 20 to 25 minutes until the onion softens.

Preheat the oven to the highest temperature. Slice the French bread diagonally into four pieces and toast them under the broiler for one to two minutes on each side. Reduce the broiler to medium heat.

Sprinkle cheese over the toasted bread slices, then return them under the broiler and toast until the cheese turns golden brown.

Stir the cognac into the soup, then season with salt and pepper to taste.

Divide the onion into four soup bowls. Place the cheesy toasted bread slices, which the French call "croûtons," on top of the onion, then pour the hot soup over them.

Advice
You dont have to use cognac, but we recommend it as it adds a divine flavor. To avoid tearing up while chopping the onion, we suggest rinsing the onion well under cold water beforehand. You can also wear goggles or freeze the onion before chopping.
