Orange and Almond Cake

Syrup

300 ml Juice, orange

Preheat the oven to 180 degrees Celsius. Grease a small deep baking dish well with butter. Line the bottom of the dish with baking paper. Thoroughly wash the orange under running water and dry it completely with a kitchen towel. Finely grate the zest, cut the orange in half, and squeeze the juice from both halves.

In a bowl with an electric mixer, cream the butter and sugar until fluffy. While continuously mixing, add the eggs one by one. Finally, mix in the grated orange zest. In another bowl, mix the breadcrumbs, ground almonds, and baking powder. Add this mixture along with the orange juice to the bowl with the eggs and butter. Mix until you get a uniform batter. Pour the batter into the prepared baking dish and bake in the preheated oven for 30 to 40 minutes. When the cake turns golden brown on the surface, remove it from the oven.

Let the cake cool in the dish for 10 minutes. Meanwhile, prepare the syrup. Add all the syrup ingredients to a small pot and place it on low heat. Slowly heat the ingredients while stirring until the sugar is completely dissolved. Bring the liquid to a boil and let it simmer gently for 4 minutes, allowing the liquid to thicken and form a syrup. Remove the pot with the syrup from the heat.

While still warm, turn the cake out onto a serving plate, remove the baking paper, and pierce the cake in several places. Pour the syrup over the cake and let it soak into the cake for 30 minutes.

Cut the cake into smaller squares and press one almond into the center of each square. Serve the prepared cake on plates and enjoy.

Advice
It is best to use organic oranges, the peel of which is not treated with pesticides. If organic oranges are not available, soak the oranges in boiling water for a few minutes and wipe them well to remove the wax, which contains toxins.
