Orange Cake with Honey Chocolate Glaze

300 g Orange, fresh

180 g Sugar, white

Steps

Wash the oranges thoroughly, then place them in a pot and cover with an appropriate amount of water. Bring to a boil, then partially or fully cover the pot and simmer the oranges on low heat for 60 to 75 minutes. They are done when the peel softens and can be easily pierced with a thin knife. Let the cooked oranges cool.

Cut the cooled oranges into quarters and remove any seeds. Keep the peel and blend the oranges into a smooth puree. It’s best to do this in a blender or food processor. Add the eggs and sugar, then mix everything well to create a smooth orange mixture.

Transfer the mixture to a bowl and add the ground almonds, which have been mixed with baking powder. Stir well to create a uniform mixture.

Grease a round cake pan (18 cm in diameter) with butter, then pour the prepared mixture into it. Gently shake the pan to evenly distribute the mixture and smooth the surface.

Bake the cake in an oven preheated to 190°C for 50 to 60 minutes. After 30-40 minutes of baking, cover it with a piece of aluminum foil or baking paper to prevent the top from over-browning. The cake is done when a toothpick inserted into the center comes out clean. Remove the baked cake from the oven and let it cool in the pan for half an hour, then carefully transfer it to a wire rack to cool completely.

Break or chop the chocolate into pieces and place it in a heatproof bowl with the butter. Melt the mixture slowly over a double boiler. While the chocolate is melting, stir in the honey. Once the chocolate mixture is completely smooth and liquid, mix in the powdered sugar.

Let the glaze cool slightly, then pour it over the cooled orange cake. Use a spatula or palette knife to spread it evenly over the top and gently push it toward the edges so it drips over the sides.

Chill the cake thoroughly before serving, then slice it into pieces and serve.

Advice
Instead of oranges, you can use tangerines, clementines, or lemons. It’s important to choose fruits with untreated peel that is safe for consumption. If using lemons, slightly increase the amount of sugar in the recipe. For the almonds, we recommend buying whole peeled almonds and grinding them at home (easiest with an electric chopper or blender).
