Orange Cake with Olive Oil
Italians are great lovers of olive oil, so they use it not only for preparing savory dishes but also sweet ones, such as this delicious orange cake. Since extra virgin olive oil can overpower the taste of the orange, we recommend using a lower quality olive oil for preparation, or even better, use flavored olive oil (with orange or lemon aroma).

Wash the oranges thoroughly and dry them with a kitchen towel. From both fruits, cut off a thin layer of peel near the stem and discard it. Then cut the fruits into larger pieces, place them in a food processor, and grind them finely. Add the olive oil and blend everything together until you get a smooth orange puree.

Preheat the oven to 180 degrees Celsius. Grease a round cake pan (22 cm in diameter) well with butter. In a large bowl, sift the flour and mix it with baking powder, baking soda, and salt.

In a bowl, beat the eggs and sugar with an electric mixer until frothy. With a hand whisk, first mix the orange puree into the egg mixture, then add the dry ingredients. Mix gently and slowly until you get a smooth batter without lumps, then stop mixing.

Pour the batter into the prepared pan, gently shake it to distribute the batter evenly, and smooth the top. Bake the cake in the preheated oven for 50 to 60 minutes. The cake is done when it turns golden brown on top, and a toothpick inserted into the cake comes out clean.

Let the baked cake cool in the pan for a few minutes, then transfer it to a wire rack and let it cool completely. Before serving, dust it with powdered sugar.

Advice
It is best to use organic citrus fruits, whose peel is not treated with pesticides. If organic citrus fruits are not available, immerse the fruits in boiling water for a few minutes, then wipe them well to remove the wax, which contains toxins. Part of the flour can be replaced with ground almonds, pistachios, or hazelnuts.
