Orange Cream
Orange cream is so versatile that it certainly wont sit in your fridge for long. Use it as a spread for pancakes or as a filling for cakes, rolls, and pastries. Spread it on toasted bread in the morning, or use it to prepare various desserts in a glass.

Ingredients

3 pieces Egg, egg yolk, fresh

2 spoons Koruzni škrob

1 spoon Orange, shell

240 ml Juice, orange

4 spoon Juice, lemon

100 g Sugar, white

60 g Butter, unsalted
Steps

First, prepare a water bath. Fill a small pot up to 1/3 with water and place it on the stove.

In a heatproof bowl, add the egg yolks, egg, cornstarch, sugar, and grated zest. Be very careful when grating to use only the yellow part of the zest and not the white, as the white part can make the cream bitter.

Mix the ingredients well with a hand whisk until the sugar is almost completely dissolved. Add the orange and lemon juice, then place the bowl over the pot of hot water. Make sure the bottom of the bowl does not touch the water in the pot. The water in the pot should be gently boiling. Cook the egg mixture over the steam, stirring constantly, for 10 to 15 minutes or until it turns into a smooth, medium-thick cream. If you run your finger over a spoon dipped in the cream, it should leave a visible trace.

Remove the bowl from the heat and gradually mix in the pieces of butter, one at a time, into the warm cream. Add the next piece only when the previous one has completely melted and mixed into the cream.

Pour the prepared cream into a sterilized jar and let it cool to room temperature. If desired, you can strain it through a fine sieve to remove the grated zest. To prevent a skin from forming on the surface, cover the cream with plastic wrap touching the surface. It will thicken slightly as it cools.

Once the cream has cooled, you can use it to prepare various desserts, or tightly seal the jar and store the cream in the fridge until ready to use.
