Orange Marmalade

Ingredients

1 kg Orange, fresh

2 piece Lemon, fresh, without shell

1.5 l Water

1 kg Sugar, white

Wash the oranges and lemons and cut them in half. Scoop out the flesh with a spoon. Remove any seeds.

Place the scooped-out flesh in a pot, add half a liter of cold water, and cook over moderate heat until the mixture thickens, which takes about 15 minutes. Remove the pot from the heat. In another pot, bring a liter of water to a boil and add the orange peels. Cook for 20 minutes to soften the peels.

Remove the pot from the heat. Use a skimmer to remove the orange peels from the water, let them cool slightly, and cut them into thin strips. Return the sliced orange peels to the pot. Add sugar, mix well, and heat slowly until the sugar dissolves. Continue heating and stirring until the mixture comes to a boil. Cook for 5 minutes, then add the strained fruit pulp through a sieve. Discard any residue left in the sieve.

Remove the pot from the heat and check the quality of the marmalade. Take a small amount of marmalade with a spoon and place it on a cold plate. If the marmalade is properly prepared, it will start to set almost immediately. If the marmalade is still runny, return the pot to the heat and cook the marmalade for about 5 more minutes, then test it again.

Pour the hot marmalade into clean, sterilized jars for preserving, and seal them tightly. Place the jars upside down and let them stand until the marmalade is completely cooled. Label the jars (contents, date) and store them in a dark, cool, and dry place. Serve it for breakfast or use it to make excellent desserts.

Advice
It is best to use organic citrus fruits whose peels are not treated with pesticides. If organic fruits are not available, immerse the oranges and lemons in boiling water for a few minutes and wipe them well to remove the wax, which contains toxins.
