Original Italian Tiramisu
The real Italian tiramisu does not include sweet cream, cottage cheese, chocolate, rum, chocolate biscuits, or fresh or preserved fruit. To prepare it, you only need strong black coffee, mascarpone, Savoiardi biscuits, a little sugar, bitter cocoa, and the freshest eggs possible. Traditionally, it is made in a rectangular glass dish, but it can be enriched with a good liqueur (amaretto), brandy, or dessert Marsala wine.

400 g Breadcrumbs, dried

2 spoons Alcohol, Dessert wine

6 pieces Egg, egg yolk, fresh

Steps

Pour the coffee into a shallow bowl with a flat bottom and let it cool. Add Marsala, brandy, or liqueur and set aside.

Separate the egg whites and yolks into two bowls. Beat the egg whites with an electric mixer until stiff peaks form. Gradually add half of the sugar while mixing and continue to beat for 2 to 3 minutes until the mixture is firm and glossy. Add the other half of the sugar to the yolks and mix until you get a light and fluffy, pale yellow mixture.

Using a hand whisk or spatula, mix the mascarpone into the yolk mixture, adding it spoon by spoon. Finally, gently and slowly fold in the egg white mixture in two or three batches.

Quickly dip the biscuits into the cooled coffee on both sides and place them side by side in a rectangular glass dish. Once the bottom of the dish is fully covered with biscuits, spread half of the cream on top, smoothing it out. Add another layer of coffee-dipped biscuits and cover them with the remaining cream. Dust the cream with cocoa powder. Cover the dish with a lid (plastic wrap) and refrigerate for at least 6 hours before serving to allow the ingredients to set.
