First, prepare the dough. Sift the flour and baking powder into a bowl. Add salt and sugar, and mix the ingredients well. Add the diced butter and fat, and using your fingertips, work them into the dry ingredients, lifting the mixture to make it airy and crumbly. Add the egg yolks and sour cream, and quickly knead the dough into a ball. Wrap it in plastic wrap and refrigerate for at least 30 minutes.

While the dough is resting, prepare the filling. Peel and grate the apples. Place them in a suitable pot and set it on the stove. Sweeten the apples to taste and season with vanilla sugar, lemon juice, and cinnamon. Simmer them over low heat, stirring occasionally, until they soften and the liquid evaporates. Remove from heat and let cool.

Preheat the oven to 180°C (350°F). Take the dough out of the refrigerator and divide it into two parts. Line a smaller rectangular baking dish with parchment paper (you can also grease it with butter and dust it with flour). Take one piece of dough and roll it out on a floured surface to the size of the baking dish. Carefully place the dough into the dish, shaping it to cover the bottom completely. Prick it with a fork in several places and evenly spread the apple filling over it. Take the second piece of dough, roll it out to the size of the baking dish, and use it to completely cover the apple filling. Place the dish in the preheated oven for 40 to 50 minutes, until the dough turns golden brown.

The apple pie is most delicious when still warm. Before serving, dust it with powdered sugar and cut it into slices.
