Oven-Baked Chicken Breasts with Cheese Sauce

2 spoons Oil, vegetable oil, canola

60 g Butter, unsalted

50 g Wheat flour, white, multi-purpose

500 ml Milk, whole milk

150 g Cheese, Gouda

50 g Cheese, Parmesan, grated

1.5 teaspoons Mustard

Preheat the oven to 190 degrees Celsius. Rinse the chicken breast halves under water and dry them well with paper towels. Lightly season them with pepper and salt, then sear them on both sides in a pan with a little oil.

In a larger pot, melt the butter. Add the flour and cook it for 1 to 2 minutes while stirring constantly. Then gradually pour in warm milk and stir to prevent lumps from forming in the sauce. Continue stirring and cooking until the sauce thickens (about 5 minutes). Remove the pot from the heat and mix in both cheeses and mustard. Season with salt and pepper to taste.

Arrange the seared chicken breast halves in a smaller baking dish and pour the mustard sauce over them. Place the dish in the preheated oven for 20 to 25 minutes, until the cheese in the sauce turns a beautiful golden brown. Serve the prepared dish with your chosen side.
