Oven-Baked Chicken with Fennel
Oven-baked dishes are an excellent choice for moments when we invite a larger number of people for lunch or dinner. If we add some vegetables to the baking dish along with the meat, we also take care of the vegetable side dish, and we have just enough time to set the table and prepare a good dessert.

Preheat the oven to 200 degrees Celsius and set the rack to the middle height. Clean and wash the fennel. Cut it in half lengthwise and slice it into larger pieces. Peel and finely chop the garlic.

In a large bowl, add the chicken pieces and fennel. Pour in the lemon juice, wine, and olive oil, and season with salt, pepper, lemon zest, and chopped garlic. Gently but thoroughly mix the ingredients.

Arrange the seasoned chicken pieces and fennel nicely in a baking dish that has been greased or lined with baking paper. Pour the remaining marinade from the bowl over the chicken, then place the dish in the preheated oven for about 45 minutes. The dish is ready when the chicken pieces turn golden brown, the fennel softens, and the edges brown. Serve with boiled rice or any potato side dish of your choice.
