Oven-Baked Meatballs with Potatoes

Ingredients
Baked potatoes

1 kg Potatoes, white

500 g Meat, beef, ground

2 handfuls Breadcrumbs, dried

1 piece Egg, fresh

1.5 teaspoons Mustard

Steps

Preheat the oven to 180 degrees Celsius. Peel, clean, and wash the potatoes. Cut them into chunks and place them in a baking dish. Season with salt and drizzle with oil. Optionally, add a bit of ground paprika. Mix well so that the potato pieces are evenly coated with oil and seasoning, then place the dish in the preheated oven for 20 minutes.

Finely chop the parsley, peel the onion, and cut it into pieces. In a large bowl, add the ground meat, breadcrumbs, 2/3 of the chopped parsley, the chopped onion, mustard, and egg. Season with salt, ground pepper, and garlic, then mix the ingredients thoroughly with clean hands to form a uniform mixture. With wet hands, shape the mixture into medium-sized meatballs.

Take the baking dish out of the oven and arrange the meatballs over the potatoes. Increase the oven temperature to 200 degrees Celsius. Bake the meatballs and potatoes for about 50 minutes, turning the meatballs halfway through to ensure they are evenly browned on all sides.

Sprinkle the remaining chopped parsley over the prepared dish. Serve with a bowl of salad and/or a creamy sauce.
