Oven-Baked Pancake

The preparation is very quick and simple, as we mix the batter directly in a blender, then pour it into a preheated pan or baking dish and bake in a preheated oven. For the sweet version, top the pancake with fresh/stewed fruit, vanilla cream, or chocolate spread, while for the savory version, use cured meat or smoked fish along with some vegetables and optional cheese. Preheat the oven to 220 degrees Celsius. Place a round baking dish or cast-iron skillet (approximately 25 centimeters in diameter) into the cold oven and let it heat up along with the oven.

Prepare the batter. Add eggs, milk, and flour to a blender. For a sweet pancake, also add sugar, salt, and optionally vanilla extract, while for a savory pancake, add only salt. Mix the ingredients until you get a smooth batter, then let it rest for a few minutes. Just before pouring the batter into the hot pan, give it a quick stir.

Remove the hot baking dish or skillet from the oven and add butter. Due to the heat, it will melt very quickly. Tilt the dish left and right to ensure it is evenly greased.

As soon as the butter melts, pour the prepared batter into the dish/skillet. Immediately place the dish into the preheated oven and let the pancake bake for 20-25 minutes. It is done when it puffs up and turns a beautiful golden brown.

Carefully remove the dish from the oven. Top the pancake with your desired toppings and serve the prepared dish while it is still warm.
