Oven-Baked Pancake with Salmon and Arugula
The Dutch baby is a globally recognized pancake that is baked in the oven. Its preparation is extremely simple, as we only need to pour the egg mixture into a well-heated, greased pan, and then the oven does the work for us. The pancake puffs up during baking, and its edges often rise above the sides of the pan in which it is prepared. And although recipes for sweet Dutch baby pancakes usually dominate, the savory version is naturally excellent. We can top it with a variety of additions and enjoy it for lunch, a snack, or dinner. Cut into smaller pieces, it also makes a great appetizer.

Steps

Preheat the oven to 220 degrees Celsius. In a small bowl, mix the flour, sugar, salt, pepper, and grated Parmesan.

In another bowl, crack the eggs and whisk them well with a hand whisk, then mix them with the milk. Add the dry ingredient mixture to the egg mixture.

Place a larger pan with a heat-resistant handle (25 cm in diameter) on the stove, which can be placed in the preheated oven. When the pan is hot, add a piece of butter and tilt the pan to spread it over the entire surface. When the butter starts to foam, pour the egg mixture into the pan. Then place the pan in the preheated oven for 15-20 minutes. The pancake is done when it puffs up and turns a nice golden brown.

Carefully remove the pan from the oven. Spread the baked pancake with crème fraîche and top it with slices of smoked salmon. Arrange cleaned and washed arugula over the pancake and grate a little Parmesan on top. Serve the prepared dish while it is still warm. If desired, you can drizzle a little lemon juice over the pancake.

Advice
The Dutch baby is traditionally prepared in a cast-iron pan, but if you dont have one, you can also prepare it in a regular pan with a heat-resistant handle or even in a baking dish.
