Oven-Baked Salmon with Broccoli and Onion
An idea for a quick, healthy, and delicious lunch or dinner. If the vegetables arent enough and you need a side dish, we recommend quinoa, rice, or couscous, but mashed potatoes also work great.

600 g Fish, salmon

1 piece Broccoli, fresh

1 piece Onion, raw

3 spoons Oil, olive

Preheat the oven to 200 degrees Celsius. Line a baking dish with parchment paper if desired. Rinse the salmon fillets under running water and dry them thoroughly with paper towels. Place them in the baking dish and set aside while you prepare the other ingredients.

Rinse the broccoli and separate it into smaller florets. Boil them in water for 1 minute, then drain well and transfer to a bowl. Season with pepper and salt, drizzle with a tablespoon of oil, and gently toss.

In a small bowl, mix two tablespoons of olive oil, lemon juice, minced garlic, and thyme to create a marinade. Pour this over the salmon fillets, seasoning them with salt and freshly ground pepper. Add the broccoli florets, sliced peeled onion, and optionally a few lemon slices. Place the baking dish in the preheated oven for 10-15 minutes.

Remove the baked fillets from the oven and serve them on plates along with the roasted vegetables. Accompany with a bowl of salad and/or your chosen side dish.
