Oven Pancake with Stewed Apples
The German oven pancake, also known as "Dutch baby," differs in many ways from our traditional pancake. It is thicker and prepared in the oven. Originally, it is made in a cast-iron skillet, but if you dont have one, you can also prepare it in a regular oven-safe skillet or even in a baking dish. The pancake is delicious on its own, but for an even more appealing and tempting presentation, you can add fresh or stewed fruit, melted chocolate, nuts, whipped cream, etc.

Ingredients
Pancake
-
2 spoons Butter, unsalted
-
3 pieces Egg, fresh
-
60 g Sugar, white
-
1 bag Sugar, white
-
1 pinch Salt, table
-
160 ml Milk, whole milk
-
80 g Wheat flour, white, multi-purpose
Stewed apples
-
2 spoons Butter, unsalted
-
2 piece Apple, fresh
-
2 spoons Juice, lemon
-
40 g Sugar, white
-
1 bag Sugar, white
Steps
-
Preheat the oven to 220 degrees Celsius. In a bowl, crack the eggs and whisk them thoroughly with a hand whisk. Add regular and vanilla sugar, salt, milk, and flour, and mix until you get a thick, smooth batter without lumps.
-
Place a cast-iron skillet on the stove and heat it. Add butter, and once it melts, tilt the skillet left and right to evenly coat it with butter. Pour the batter into the hot, greased skillet. Place the skillet with the batter in the preheated oven for 20 minutes. The pancake is done when it puffs up and turns golden brown on top.
-
While the pancake is baking, prepare the apples. First, wash them, then cut them into slices, removing the cores and seeds. In a saucepan over medium heat, melt the butter. Add the apples and cook them for 5 minutes, stirring occasionally. Pour in the lemon juice, add regular and vanilla sugar, mix well, and cover the saucepan. Let the apples stew on low heat for 10 to 15 minutes (until they soften but remain firm), stirring occasionally.
-
Carefully remove the skillet with the baked pancake from the oven. Top it with the stewed apples, dust with powdered sugar, and serve immediately.
