- 1 kg Nuts, chestnut, fresh

Preheat the oven to 220 degrees Celsius. Before roasting, make sure to score the chestnuts on the flat or rounded side of the fruit in the shape of a cross or along the width through the entire side. The cut should be deep enough to pierce the hard shell and the skin underneath. Be careful not to cut into the flesh of the chestnut, as it may fall apart during roasting.

Arrange the scored chestnuts in a single layer on a baking tray, sprinkle them with water, and roast on the top rack for 25 to 35 minutes. Stir them two to three times during roasting to ensure even browning. To check if the chestnuts are done, test the thickest one.

Transfer the roasted chestnuts to a cloth, wrap them up, and let them rest for 5 to 10 minutes. Then, pour them into a bowl and enjoy them immediately, as they are best while still warm.

Advice
Chestnuts will taste better if they are left to "rest" for a day or two, preferably spread out on paper. Before doing so, inspect them and discard any worm-infested chestnuts, as worms can also attack healthy fruits. Resting chestnuts are also easier to peel. You can soak the chestnuts in lukewarm water for a while before cutting them to soften and swell the shell slightly. Chestnuts can also be roasted in a pan on the stove.
